  1. It’s 2 of sides of fresh Sea Bass.
  2. Take 1 of big handful of cooked King Prawns.
  3. Make ready 4 of medium sweet potatoes.
  4. Make ready 5 of dried pitted dates.
  5. Take 1 of large red onion, chopped.
  6. Make ready 2 tsp of freshly grated ginger.
  7. It’s 3 cloves of garlic, chopped.
  8. Make ready 2 tbsp of tomato puree or paste.
  9. Make ready 1.5 of sp ground cumin.
  10. Take 1 tsp of ground coriander.
  11. Make ready 1 tsp of ground cinnamon.
  12. Prepare 350 ml of chicken stock.
  13. It’s 1 sprig of fresh chopped coriander.

Sweet potato & fish tagine instructions

  1. Rub oil into your tagine and put it in the oven on a medium heat (200ºC).
  2. Cut the Sea Bass into big chunks and brown it in a large pan, then set this aside.
  3. Turn the pan down and soften the onion, frying it for 4 minutes.
  4. Add the ginger, garlic, tomato puree, ground cumin, coriander and cinnamon, mix and cook for 2 mins.
  5. Put the sauce into the tagine along with the dates, the fish and the prawns, cover and cook for 20 mins.
  6. Serve and garnish with a sprinkling of fresh coriander.
