Ingredients of Brinjal and drumstick curry

  1. It’s 2 of brinjal cut into thick slices.
  2. You need 1 of drumstick cut into pieces.
  3. Take 1 of onion chopped into slices.
  4. Make ready 1 of tomato cut into slices.
  5. It’s 6 of no garlic flakes crushed into slices.
  6. Prepare of Curry and coriander leaves for garnish.
  7. It’s 1 tablespoon of turmeric powder.
  8. Prepare 1 tablespoon of red chilli powder.
  9. It’s 1 tablespoon of coriander powder.
  10. Take 25 ml of cooking oil.
  11. You need of Mustard for seasoning.
  12. Prepare to taste of Salt.

But we love to have it with curd rice!Brinjal-Drumstick curry goes really with rotis and rice.The time to prepare it is also very less.We make this curry regularly for rotis.

Brinjal and drumstick curry step by step

  1. Take a pan add oil once get heat seasoning it with mustard then add onion tomato garlic brinjal drumstick turmeric powder and fry well.
  2. Add all the spices with salt.
  3. Add little water and sauté well add curry and coriander leaves and close the lid.
  4. Once cooked,wait till it becomes gravy and transfer it to bowl.

I love this combination and hence this curry.It's a simple recipe with basic ingredients & no tedious chopping work too!This curry goes well with sambar, rasam or any Kuzhambu.

Here i have added brinjal and drumstick but you can add the vegetables accordingly to your taste.It requires only chilli,coriander,onions and tomatoes.I have added grounded peanuts powder to this curry which had given a wonderful taste.Brinjal Drumstick Curry is a delicious South Indian style semi - dry poriyal.Kathirikai Murungakkai flavorful poriyal tastes yummy as a side with any rice accompaniment or can also be mixed with rice and taken as a variety rice.
