Stir in broth, cream, salt and pepper.I FOUND I could cut down the time in preparing scalloped potatoes by first simmering them on top of the stove in an ovenproof skillet and then slipping it into the oven to finish them nicely with a brown crust. But these potatoes are cooked in the sauce first on the stove top, and then finished in the oven and they are actually really easy to make. The perfect side dish to an elegant or celebratory main course, or the welcome addition to any potluck supper, scalloped potatoes are one of those dishes that seem complicated, but are deceptively simple.

First, you need to use a wide-bottomed pan, preferably a Dutch oven (affiliate link). It helps evenly cook the potatoes instead of stacking them on top of each other.Next, you need to create a roux, which is a paste made of fat, flour, and liquid.
You'll need to put in a bit of "peeler time" to get the spuds ready for the oven, but after that it's just a long bake and a short standing period to let the sauce thicken.Bring to a boil and add the potatoes.Stirring often is highly recommended as the bottom of the pan may burn if not stirred often).Great recipe for Stove top Scalloped Potatoes. In the summer months I so dislike heating up the house using the oven.
