For these quesadillas that I made out of Sunday's grilled chicken thighs, shredded and stuffed into a corn tortilla with a little cheese and quickly toasted, I stirred together a lime-zest-imbued cucumber and avocado salsa that added a welcome citrus edge. Cut into wedges and top with some of the salsa.

  1. You need 250 gr of chicken breasts.
  2. Take 1 tbsp of ground red onion and garlic.
  3. It’s 1 tsp of ground paprika.
  4. Make ready 1/2 tsp of chilli.
  5. It’s 1/2 tsp of oregano.
  6. It’s 1/2 tsp of black pepper.
  7. Make ready of Salt.
  8. You need 1/2 of red paprika (slice it).
  9. You need 1/2 of Onion (slice it).
  10. Take 1 cup of mozzarella cheese.
  11. You need 1 cup of cheddar cheese.
  12. Prepare 4 of large tortillas.

Cut them into wedges and whirl up a batch of easy-to-make avocado salsa for dunking.Combine salsa, dressing and chili powder; spread evenly onto bottom halves of tortillas.Fold tortillas in half to enclose filling.Transfer quesadillas to work surface and cut into wedges.

Chicken Quesadillas with salsa instructions

  1. Cut the chicken breasts in to dice size.
  2. Season chicken breasts with red onion, garlic, paprika, chilli, oregano, black pepper and salt.
  3. Heat vegetable oil in a non stick skillet.
  4. Add the chicken, and cook it until cooked through.
  5. Add Onion and Paprika.
  6. Remove the chicken and place it into a plate.
  7. Preheat a large non stick skillet over medium high heat.
  8. If it's already hot enough, place the tortilla in the non stick skillet for 2 minutes, and then flipp it.
  9. Sprinkle cheddar cheese on one half of the tortilla, followed by chicken, paprika, and onion, and the last add some mozzarella cheese.
  10. Fold it in half.
  11. Let it cooked for 3 minutes more each side.
