Moghrabieh is considered a main dish, but can absolutely be served as an appetizer if you'd like. The way Moghrabieh is typically served is by separating the cooked moghrabieh pearls in one serving bowl, and the broth, chicken, onion and chick peas mixture in a separate serving bowl.

Ingredients of Moghrabieh
- Prepare 500 g of dry moghrabieh.
- It’s 200 g of chickpeas.
- You need 500 g of onions.
- It’s 1 tbsp of cinnamon powder.
- You need 1/2 tsp of salt.
- Prepare 2 tbsp of ghee or more as desired.
Mogrhabieh, or Lebanese couscous, is a dish much revered in Lebanon and the surrounding region.Meaning "dish of the Maghreb," moghrabieh refers to both the finished dish and the grain with which it is made.Lebanese couscous is larger than traditional couscous, and made of semolina flour rolled into pearl-sized balls.Drain and then run the cooked moghrabieh under cold water.
Moghrabieh instructions
- Begin with boiling moghrabieh,in a cooking pot add water, salt, and oil.
- To make sure that moghrabieh has cooked, check using you’re fingers to fell. Moghrabieh is cooked when it is firm. Drain and wash with cold running water..
- Moghrabieh can also be soaked in water over night and cooked with out boiling.
- Soak chickpeas over night, boil until cooked. Drain.
- Boil the onions for 3 minutes. Drain and slice.
- In a saute pan, add ghee and onions saute until they soften.
- Then add moghrabieh and chickpeas and stir about 2 minutes.
- Taste with salt and cinnamon.
- Serve moghrabieh while it's hot with pickles.
