Ingredients of Vendakka Theeyal (Okra/Ladies finger in roasted coconut)

  1. It’s 20 nos of ladies finger Vendakka / -.
  2. It’s 2 nos of Tomato -.
  3. It’s 1 of Onion -.
  4. Prepare 2 of Green chillies (optional) -.
  5. Prepare 2 of Curry leaves - strings.
  6. It’s 1 tablespoon of Tamarind gooseberry tamarind - a small size / pulp -.
  7. You need 1 teaspoon of Chilli powder -.
  8. It’s 2 teaspoons of Coriander powder -.
  9. Make ready 1/2 teaspoon of Turmeric powder -.
  10. Take as required of Salt -.
  11. Make ready 2 cups of water -.
  12. Make ready 1 teaspoon of cooking oil -.
  13. Take 1/2 teaspoon of coconut oil -.
  14. Take 4 tablespoons of coconut Grated -.
  15. You need 4 nos of shallots -  / 1/2.
  16. It’s 1 of curry leaves - string.
  17. Prepare 1 teaspoon of cooking oil -.

Here, I have combined both my favourite Theeyals, namely Vendakka(okra) and cherulli(Shallots) in one pot.Lightly sauteed bhindi in a spiced and mildly.Vendakka paal curry is a Kerala speciality,mildly spiced coconut milk based curry that goes well with rice.This tastes similar to okra stew as coconut milk is the main highlight.

Vendakka Theeyal (Okra/Ladies finger in roasted coconut) step by step

  1. Wash ladies fingers and cut into 1 inch pieces..
  2. Cut onion tomatoes and slit green chillies.
  3. Heat 1 teaspoon oil in a pan then add grated coconut, shallots/onion and curry leaves and fry till coconut becomes golden brown in colour..
  4. Heat 1 teaspoon oil in the same pan or another then add onion, green chillies and ladies fingers and fry till onions become translucent..
  5. Add chilli, coriander and turmeric powder and saute for a minute..
  6. Add tomato and tamarind pulp mix well and fry for 1 - 2 minutes..
  7. Add water and salt mix well then close the lid and allow to cook ladies fingers..
  8. Grind the roasted coconut mixture to a smooth paste by adding enough water..
  9. Now add this paste in to the curry and mix well. If the curry is too thick then add a little more water, bring it to boil then switch off the flame. Then sprinkle some coconut oil and curry leaves..
