Ingredients of Sooji (semolina) halwa
- Prepare 120 gms of semolina / barik suji (1 tea cup).
- You need 1-1 1/2 tbs of ghee.
- You need 50 gms of / half tea cup jaggery powder.
- You need As needed of Hot water (double the amount of suji i.e. 2 tea cups).
- Take 5 of cashews chopped (slightly roasted in ghee).
- Make ready 3 of almonds finely chopped (slightly roasted in ghee).
- Make ready As needed of Few raisins.
- Make ready 2 of cardamoms powder.
Heat and stir until halwa reaches the consistency of thick mashed potatoes.Sooji halwa is often made in bulk on festive or religious occasions.Add ½ cup sooji (rava or semolina).Use a fine variety of sooji and not the coarser variety.
Sooji (semolina) halwa step by step
- In a non stick pan, add ghee.
- Dry roast the suji on low heat till it changes colour. Keep stirring continuously for it not to get burnt. Nowadays you get pre roasted suji in stores. This reduces the roasting time.
- When the ghee gets hot add the suji and mix well.
- In the meantime boil two tea cups of water.
- Now add the jaggery, cardamoms, raisins, roasted cashew and almonds in the semolina.
- Add the hot water and mix well till you get the desired consistency on low heat.
- Sweetness adjusted according to one’ taste turn off the gas when you pour the hot water in the pan. It avoids stuttering and the hot stuff coming on you. Once you pour the hot water turn the gas on again whatever measurement you take for the suji, the jaggery should be approximately half of it and water double of it you can use milk instead of water or use half milk and half water.
