Ingredients of Vegetable Fritatta

  1. You need 1 tablespoon of oil.
  2. You need 4 of small shallots.
  3. Make ready 1 handful of defrosted peas.
  4. Take 5 of eggs.
  5. Make ready pinch of salt and pepper.
  6. You need 1 teaspoon of mustard.
  7. Take of about half of a mozzarella ball.

This vegetable frittata is baked egg goodness!It's so easy to make, perfect for cleaning out the fridge and great for feeding a crowd!Frittata also stores pretty well, so feel free to enjoy it the next day on a bagel or English muffin for a quick and easy breakfast.Use leftover veggies in the frittata: Re-warm leftover vegetables in the skillet before mixing with the egg mixture.

Vegetable Fritatta instructions

  1. Heat the oil in a large shallow frying pan (I used a crêpe pan). Add diced shallots.
  2. As soon as the shallots get translucent, add peas. Fry for about a minute.
  3. In the meantime, whisk the eggs with salt, pepper and mustard. Season to taste.
  4. Pour the egg mixture over the vegetables. Stir to distribute evenly, then let it set.
  5. At this point, you can either put the mixture in the oven (if you have an ovenproof pan) or continue cooking it on the stove. If you choose the latter, cover the pan with a lid so you won't need to flip the fritatta.
  6. Scatter diced cheese on top and let it melt while the fritatta cooks (mine took roughly 15min) over low heat (your lowest setting).
  7. Then simply serve warm or cold. Enjoy :).

Cook the vegetables on the stove top and then add to the egg mixture.Keep in mind that while it is quicker, a microwave doesn't do a very good job of reheating evenly.Either way, remove any avocado slices from the top before reheating.
